Mouthwatering Mughlai mutton dishes are great additions during any occasion. Mughlai dishes have their roots in the regal kitchens of the Mughal Empire. Here, we have shared a few Mughlai mutton recipes that are famous for their rich taste:
i. Mughlai Mutton Malai
Ingredients You Need
- ½ kilograms Mutton
- 1 tsp Salt 1 tsp
- 1 cup Yogurt
- 1½ tsp Coriander powder
- 1 tsp Allspice
- 2 tsp Lemon juice
- 1 tsp Cumin (roasted and crushed)
- 1½ tsp Chili powder
- 3tsp Onion paste
- 1tbsp Kewra water
- ¼tsp Saffron
- 1tsp Ginger and Garlic paste
- ¼tsp Green cardamom powder
- 1tsp grounded Cashew nuts
- 2tsp Malai (non-homogenised whole milk)
- 10 Mint leaves
- Oil (as required)
Method to Cook:
- Marinate the mutton with yogurt, coriander powder, salt, all spice, cumin powder, chili powder, onion paste, lemon juice, ginge- garlic paste and green cardamom powder. Set it aside for about an hour.
- Now heat oil in a pan and add the marinated mutton. Cover it and cook on low flame for about half an hour.
- Add the paste of cashew nuts, malai, kewra water and mint leaves. Add a pinch of saffron. Mix it well.
- Let the mutton simmer for some time. You can add a little bit of water to cook the mutton. Cook until the oil starts to float and the mutton is tender.
- Serve hot with naan or chapatti.
ii. Mughlai Mutton Masala
Ingredients You Need
- 500 gram Mutton
- 3 large Onion (paste)
- ½ tsp Turmeric powder
- ½ cup Yogurt
- 1 tsp Cilantro (finely chopped)
- ½ cup water
- 1 tsp mint leaves (finely chopped)
- Salt to taste
- 3 tsp Ghee
- 3 tsp Oil
- 10 Cashew nuts (crushed)
- 1 tsp Green Chilli paste
- 1 tsp Ginger Garlic paste
- 1 tsp Coriander seed
- ½ tsp Cumin seeds
- 2 Green Cardamom
- 1 Black Cardamom
- 5 Black Pepper Corn
- 1 Clove
- 1 Cinnamon stick
- 2 Dry red chilli
Method to Cook
- Grind onion, green chillies, coriander and cumin seeds, green and black cardamom, cloves , pepper corn, cinnamon stick and dry chillies. Use water as required.
- Heat ghee in a pan and put the mutton pieces in I t. Fry it until they are brown. Fry the cashew nuts as well and keep aside.
- Now heat oil and fry onions until golden brown. Add the masala prepared in the first step and stir for 5 minutes.
- Add the mutton pieces along with a pinch of salt and turmeric powder. Fry on low flame for a few minutes or until the oil separates. Add a cup of water and put everything in a pressure cooker. Allow it to cook for 5 whistles.
- Now add beaten yogurt and mix well. Cook for 5 minutes in low to medium flame until the mutton is tender.
- Garnish with mint leaves, cilantro leaves and crushed cashew nuts. Serve hot with naan or chapatti.
