1. Grilled Chicken and Lemon Salad


For Chicken:

3/4 cup of fresh lemon juice
1/4 cup olive oil
1 tsp fresh thyme leaves
1 tsp salt
142 gram chicken breast
Cooking spray

For Salad:

1 cup peas
1/2 cup red bell pepper(cut in strips)
1/2 cup yellow bell pepper (cut in strips)
1/2 cup sliced zucchini (Dhundul)
2 tsp chopped cilantro
1 tsp extra virgin olive oil
1/4 tsp salt
1/4 tsp ground black pepper
4 sliced lemons (for garnishing)


1. Take the chicken and add lemon juice, olive oil, thyme leaves and salt. Mix it and keep in refrigerator for an hour.
2. Coat the grill rack with cooking spray. Put the chicken and grill each side for about 6 minutes. Once cooked, slice it.
3. For the salad, boil the peas for 30 seconds. Drain the water.
4. Now add the bell peppers, zucchini, cilantro, extra virgin olive oil, salt and mix thoroughly.
5. Add the chicken and toss. Garnish with sliced lemons.

2. Chicken and Vegetable Soup


1 cup shredded chicken breast
1/2 cup uncooked orzo pasta
1 1/2 tsp extra virgin olive oil
1 medium size chopped onion
1/2 chopped carrot
1 tsp minced garlic
1/2 tsp ground black pepper
1/4 teaspoon salt
1 thyme twig
3 cups chicken broth
500 gram chopped tomatoes (roasted)
141 gram green beans (Chopped)
1/2 cup grated Parmesan cheese


1. Heat extra virgin olive oil in a pan. Add the onion, carrot,garlic, black pepper, salt and thyme twig. Saute for at least 4 minutes.
2. Add the chicken broth and chopped tomatoes. Boil for a few minutes.
3. Now add the pasta followed by the beans. Cook for 5 minutes.
4. Add the chicken and the cheese. Cook for a few minutes.
5. Take out the thyme twig before serving hot.

3. Szechuan Chicken Stir-Fry


450 gram chicken breast halves (chopped in small cubes)
1 tablespoon dark sesame oil,
1/2 chicken broth
1 tsp rice vinegar
2 tsp soy sauce
2 tsp cornstarch
2 tsp chili paste
1/4 tsp salt
2 tsp canola oil, divided
1 yellow bell pepper(chopped)
1 red bell pepper (chopped)
1 cup snow peas (chopped)
1/2 cup sliced onion
1 tsp grated ginger
1 tsp minced garlic
2 cups cooked white rice
1/4 cup green onion (sliced)
1/4 cup chopped roasted peanuts


1. Heat sesame oil in a pan and add chicken broth, soy sauce, rice vinegar, chilli paste, cornstarch and salt. Cook for a few minutes on medium heat.
2. Now add the canola oil and chicken. Stir fry for a few minutes.
3. Now, in a separate pan, heat canola oil. Add the bell peppers, snow peas, ginger and garlic. Cook for about a minute.
4. Now add the cooked chicken to it. Cook for 30 minutes till the gravy thickens.
5. Garnish with roasted peanuts and sliced green onions. Serve hot with rice.
