If you love to have a spicy mutton curry with steaming hot rice, then chances of you reading this are high. Bengalis love their mutton kosha. It is an essential part of the Sunday brunch in almost every Bengali household. This authentic Bengali cuisine has never ceased to impress our taste buds. Almost every Bengali has grown up biting into the juicy mutton pieces cooked with a variety of spices over low heat.

Mutton Rogan Josh
1 kg Mutton (Goat meat)
4 thinly chopped onions
3 tsp mustard oil
2 Cinnamon sticks
1/3 tsp Fennel seeds
2 Black cardamom and 4 green cardamom
2 Bay leaves
1/3 tsp Asafoetida
2 tsp ginger garlic paste
2 tsp Kashmiri red chilli powder
1/2 tsp Fennel powder
1 tsp ginger powder
1/3 tsp garam masala
1/2 tsp Cumin powder
a pinch of saffron (mixed in warm water or milk)
1/2 cup Yogurt
Heat mustard oil in a pan and add cinnamon,cardamoms,cloves,fennel seeds,bay leaves. Roast in a low flame.
Put asafoetida and chopped onions. Fry till golden brown.
Now add the ginger garlic paste, chilly powder and saute.
Add the mutton and cook on high flame until it turn brown.
Add yogurt and mix it until the meat is fully coated.
As you see oil separating from the mixture, add a cup of water and salt. Cover the pan and cook for about half an hour.
Once the meat is soft, add garam masala, fennel powder, saffron, and ginger powder. Let it simmer for a few minutes.
Mutton Rogan Josh is ready to be served with steaming rice or roti.
1 kg Mutton
300 gram chopped onions
20 gram ginger paste
20 gram garlic paste
12 pods of green cardamom
5 gram white pepper powder
50 gram cashew nut
20 gram desiccated coconut
250 gram yogurt (beaten)
150 gram khoya (mashed)
250 gram ghee
A few drops of kewda jal
A few drops of meetha ittr
Wash the mutton pieces and blanch them.
Grind the cashew nuts, onions, and coconut.
Put the mutton in a pan and cover it with water. Now add cardamom pods and salt. Let it simmer for few minutes.
Check if the meat is soft. Once the meat is cooked, add the ginger-garlic paste and give it a good stir.
Cook the meat until the gravy thickens. Add ghee and the beaten yogurt. Now cook the meat until the gravy dries.
Now add the coconut, onion and cashew nut paste. Stir for 2-3 minutes. Take care that the masala doesn’t turn brown.
Add white pepper and enough water to cook the meat. Simmer until the meat is soft.
Remove from fire and add kewda jal, meetha ittr and khoya. Blend well and finish it off with adding cream.
Your mutton rezala is ready to be served hot with roti or naan.
